Gillian's veggies

Ingredients

    750 g potatoes, peeled
    500 g carrots, peeled
    500 g pumpkin sweet potatoes
    1 onion
    1/2 bulb garlic, broken into cloves
    Extra virgin olive oil
    2 tablespoons Little Donkey lemon infused honey
    Sea salt
    Freshly ground black pepper
    1/2 bunch fresh thyme
   
  
    Garnish
    1 cup crumbled feta cheese

 

Instructions

Preheat the oven to 190ÂșC.

Cut any large vegetables in pieces and leave any small ones whole.

Toss the vegetables in olive oil, add sea salt, black pepper and place them in a roasting tin.

Cook for 20 minutes and then drizzle the lemon infused honey over the vegetables, add the fresh thyme and put them back to oven until they get tender and soft enough.

Serve them with crumbled feta on top.
